In iOS17 on my phone I have them under Settings->Music - and there is a sub section under Audio. All the instructions online, including from Apple themselves, say Settings->Apps->Music tap Audio Quality and turn "lossless" on or off. I only have EQ, soundcheck, and crossfade where other people's screenshots have an "Audio Quality" setting. Can someone please let me know where they have gone?

There have been three updates available since iPadOS 18.6.2
You might want to try updating to the newest iPadOS 18 version
About iPadOS 18 Updates - Apple Support says: iPadOS 18.7.2
and "This update provides important security fixes and is recommended for all users".
