The very first time that you used iTunes to perform a backup, you will have been prompted to provide a password - this being used to encrypt sensitive data within the backup. All subsequent backups will use the password, as set, to encrypt the backup without further prompting. Had you declined to provide a password for the backup, the backup would not include sensitive data (such as your Keychain saved passwords).

When attempting to restore an encrypted backup, you must supply the password that was set - as otherwise you'll not be able to restore your backup. The password used for iTunes backup, if forgotten, cannot be recovered - rendering all encrypted backups unusable.
