notifications on apple watch not working and I unpair it and then will be fine for like a day then it will happen again and will stop receiving notifications on my watch and my phone just lights up saying I have a notification it’s really annoying!

Did you try to set up you're watch as a new device after erasing and paring it again, to rule pout defective data from that backup?
