I use it all the time on the iPhone for Message dictation, setting Reminder, and adding events to the Calendar and it works quite well for all those tasks. On the HomePod, I use it exclusively to play music and it is always spot on. I also have a Mac, but don't use it there as much as my other devices. On the Mac, if I wanted to search for an email I would use the Search box in the Mail app as I would be sitting in front of the computer anyway.
Not sure which task you used to find an email, it can find recent emails by a Contact Name or read recent emails, but asking to find an email by content is not likely to produce a result. For a bad connection issue, besides the obvious reason, another reason could be that you have a VPN installed. Those have been seen to cause a variety of network issues and turning them off does not resolve the problem, they have to be removed.

So far that is by design and Apple has provided brief updates publicly on progress when dealing with personal information and integration with Siri. There are legitimate privacy concerns when a personal assistant does know everything about you and your life. The latest example is the ChatGPT Atlas browser that was recently launched with some troubling privacy concerns, putting your data and security at risk.
I really like using Siri, especially on Apple Watch, it's so quick and responsive. It manages quite well with every-day tasks like creating, moving and removing Calendar Entries, playing from Apple Music and sending messages.
I have also found it to be the snappiest assistant when it comes to smarthome-related requests.
What problems do you encounter?
I just tried sending an email to myself and that worked fine, but when I asked it to find a particular email I had sent, it went off on some weird tangent about...I can't even remember, it was so unassociated with anything about me or my life. And it constantly asks if I want Chat GPT to "answer that" when I'm giving it instructions, not asking for information.
I asked it to find an email for me and it says it doesn't exist even though I can find it manually, myself. It says it has a bad connection. It interrupts and gives me crazy answers to questions I didn't ask. It's a complete mess.
