I'd like to buy an iPhone with a deal say a gift card on Black Friday.
My question is that after the phone is delivered but I changed my mind on the colour, can I replace it with another colour without losing the gift card after the sales event is completed?

If you returned it and bought another one after the promotion ended, it sounds like you would be giving up all of the savings from the promotion. That is, you would wind up paying Apple additional money to “replace” the discounted, returned phone with the non-discounted one.
Sounds like you would still have the gift card, but you might lose the “free” aspect. (Return product for (list - value of gift card); order another product for (list).). You did ask about returning the first phone after the promotion was over…
At the end of the day, you would have paid full list price for the new phone, and the full price of the gift card for the non-returnable gift card.

Thanks Jim and LD150 for the reply. So when I purchase another one with a different colour after returning the one bought during the promotion but within 14 days, it will be at the standard/non-reduced price.
In this way, combined with the gift card, it's still cheaper and a good deal although I paid an additional amount equal to the gift card.
The amount you spend is the same either way. Full price without the Gift Card or promotional price of device + the amount of the Gift Card. The Black Friday deal is better because even though you have spent the same amount, you have the Gift Card to make additional purchases.
And when you return it you will get back exactly what you spent. You need to reorder the replacement and the deal may not be available at that time.
