How can somebody possibly fake their location and find their location and even copy your old phone eSIM to another phone?

Can they fake a location? Yes that is exactly what a VPN does where the IP location can be different than the actual location.
Can they copy your old phone eSIM? If your cell provider allows the change. It is not possible to use the same eSIM on more than one phone. That is exactly how you would transfer an eSIM when purchasing a new device.
If you are asking if someone can remotely access your eSIM to use as theirs, then the answer to that is NO.
