For what it's worth, I have no issues with lagging on any of my Macs running Tahoe 26.2. It sounds like an issue with your Mac.
Install EtreCheck and post the report.
Use the Additional Text icon to paste in the report.
Hopefully the problem will reveal itself in the report.
Just to add, you are running the lowest end M1 MBA with only 8GBs of RAM. That doesn't help running all the Apps you have installed that run in the background.
Then you need to have a chat with your IT department.
FWIW, the apps in question may need updated for Tahoe.
My problem literally started once my system installed the new Tahoe iOS, and was rebooted.
Was not happening before.
I used the same program before and then afterwards after installing the IOS that’s when the problem started.

All animations such as “save”in checkbook pro or enter a line item. I get the spinning working animation that started after I updated to Tahoe. I have seen it in other programs as well. Tahoe is very slow compared to previous operating system.
Opening files,moving files. Seems to hesitate before working. Very frustrating. Wish I hadn’t updated.
I have searched on YouTube for tweaks to help while waiting for an update to fix lagging issues but it’s still a problem.

Good. What I can say is, I have none of the issues you mentioned on any of my Macs running Tahe 26.2. The main difference is, I have none of the apps installed you do. 🤔
I do appreciate your input and I am grateful that there is a forum to look for answers.
To state a persons apps are Junk when you don't have any Ideal what they are for and why the person has them installed is not a professional response.
I do have only an entry level M1 with 8GB because I don't use this as my main computer.
I do think Apple should not offer an updated IOS to a system that cant run all the bells & whistles that the ISO has without causing problems due to not enough memory or space and cant be added.
I wish there was a uninstall for this ISO as it is not an improvement.

FWIW, I do know what they are supposed to be for, and someone's reason for installing them doesn't affect their "junk" status. As far as "a professional response", no one here is paid, we're all users just like yourself.

The mentioned apps are junk (*); and, for what it's worth, we are users like you.
None of us are here in a professional capacity, but many have decades of experience, and have been helping users in this forum for a long while.
We are not Apple, and none of us can say why Apple does what it does. I, for one, agree that Apple should not have kept selling Macs with 8GB for so long (or Macs with 128GB of storage, which it did for years, and was way more aggravating).
