Can I purchase just 1 TB of storage?

No. The only plans offered are 5GB, 200GB and 2TB. See: iCloud storage plans and pricing - Apple Support

Thanks, is there any other storage provider you would recommend for Apple products, just don't need all that Storage and it seems crazy they don't offer a great range or options. Was looking at Dropbox.
