Mail is taking up a lot of memory on my Mac. I want to delete a lot of it, but I understand it is not as simple as just trashing messages. I have gmail; if I go to the gmail website and delete the messages there will they also disappear from my Mac, iPhone etc? Or do I have to delete them twice?

If you don't want a message to stay in your Trash for 30 days, you can permanently delete it.
Trash.Note : the imap account acts as mirror with web server account .

Google's Gmail is an IMAP service, so deletions on any signed in device will be synced to the other devices.
You could delete messages from any of those devices and they will sync to the others.
