Deleting photos on only one device

How do I delete photos on my iPhone, but have them remain on my iMac and cloud?

No way to do so. iCloud is a sync tool, not a storage. Once you delete the photo from one device, it will be deleted everywhere.

If you disable iCloud Photos, then the device with the disabled options won't receive new ones.
