How do still use iMessage without internet

iMessage is an internet messaging service. You must have an internet connection (WiFi or cellular data connection) to send and receive iMessages.

Same thing goes for any internet messaging service - Skype, Google Hangouts, etc.

You don't.

As others have noted, you must have an internet connection. However, it doesn't have to be a cellular data connection. You can use WiFi as well.
