When you are in the process of creating an Apple ID address see this https://support.apple.com/en-in/HT204316
Take cursor on the dead end of the field and click command and delete , then type the new mail address correctly , and click on done to save the data .
In case if you had saved the data by clicking on done with wrong spellings or the address used the id is permanent and it can't be changed see this thread https://discussions.apple.com/thread/250538413?answerId=251031359022#251031359022
