How do I delete a childs account from Family Sharing?

Child accounts (e.g. under-13s) can only exist as part of a Family Share. You can either transfer them to a different Share, or get the account (and therefore its purchases and content) permanently deleted : How to delete your Apple ID account - Apple Support
