I was attempting to transfer data from the 2017 iMac to the newly released MacBook 15 i9 2019. I tried migration assistant again several times, and now, it is stuck like this for several minutes. What should I do?

Wi-Fi is not reliable when using Migration, it is very slow and sometimes does not complete. The fastest and most reliable method is to transfer from a Time Machine backup connected directly to the new Mac. The second best is via Ethernet.

Yes, I would. You could also transfer from TM disk via usb. It will be slower but should be reliable. But first check to see how the migration went, it may have completed with a minute remaining?
