Fonts in Mail App

In the Mail app, I can change font style and size for a particular email. How do I select fonts and style as my defaults for all emails?

Thanks. That’s what I view as a real inconvenience. There should be a way to set a default font style and size.

If you are talking about what font/style will be seen by the recipients of your emails, then you should do that for each outgoing individually. Mail > Preferences won't set a default for that.

Some people switch to Outlook, which does have this feature.
