How do I change the line spacing in Pages

While the iwork for iOS forum might have given you a faster answer we can get you there. I am using iOS Pages on my phone so there might be slight differences.

With your insertion point in the paragraph you want to change, tap the paintbrush. Scroll down to line spacing. You will be able to modify spacing withing your paragraph and before and after.

Nothing has changed in Pages v8.2. The Spacing controls are in the same location, with the same controls as previous versions of Pages since 2013. Select your paragraph text, and apply your new spacing. Then you can preserve that particular spacing in a new paragraph style.

This is a Pages for Mac community and you made no mention of iPad. I cannot answer your question because I do not use Pages on iOS/iPadOS.
