It's been noted that you can no longer adjust column size in Catalina/ Apple mail.
This is glitch not a feature.
It seems that, View/ Show Side Preview, does not work either. Anyone else?

I see you are having an issue with adjusting column width in the Mail app under Catalina. This should be freely adjustable.
Start by trying to safe launch the Mail app by pressing and holding the shift key whilst the app opens.
If that does not resolve the issue, try safe booting the Mac itself.

If still unresolved, try setting up a test user account for testing.

It does not appear to me that Catalina mail provides any affordance for resizing, rearranging, viewing or hiding columns. Even the usability of the sort function is severely constrained.
I recommend providing feedback to Apple. Vote early and often.
This problem is irritating at best.
