I don't want to update yet

I currently have Mojave and this question is actually about upgrading to Catalina.

I use some software that hasn't been approved to work with the newest MacOS. So I've been holding out on updating my relatively new MacBook Pro.

Problem is, I'm getting a new iPhone and I wanted to run a solid backup before I transfer over. When I hook my phone up, it says it needs an update.

Can I run a PARTIAL update to the MacOS? Just so I can connect my phone to run the backup?

It's prompting for an update to iTunes to work with the new phone. You don't have to update to Catalina. Just let iTunes install the update.
