why do my inbox mail mail disappear when I delete junk mail

I was nervous about doing this since I have saved mail in other mailboxes and I was afraid they would all be deleted. All went well. I repeated the same procedure for my IPhone.

Try removing your Mail account from Settings > Passwords & Accounts then re-add it.
My email keep disappearing especially when I try to move them from inbox to a particular OR junk mail ( not really) to inbox. Using ipad pro 10.4

Yes, you will need to completely remove the Mail account and re-add it.
