I can't find the macos catalina 10.15.0 update. My system won't allow me to update to 10.15.1 without it. HELP!!

Catalina is an upgrade from a prior version of macOS, provided your Mac meets the hardware requirements. The Catalina upgrade is a full installer found in the Mac App Store. Presently, it is at version 10.15.1.

Sounds like you're trying to use an update rather than the full upgrade installer. Go the the Mac AppStore and you'll find it on the front page.
