my iphone is stolen, if i remove the device from my apple id will the person who stole my phone still be able to access my apps and pictures etc?

See the information in If your iPhone, iPad, or iPod touch is lost or stolen - Apple Support

and note the following from that article:

If you remove the device from your account after you erase it, Activation Lock will be turned off. This allows another person to turn on and use your device.
