Two folders have been deleted on my Mac air after the Catalina update. They were placed under favorites in the finder-function. What can I do? I haven't used the time machine to secure my folders before this update....

What was the source of the folders? If they were folders you dragged into the Finder sidebar they should still be in their original location and you can just drag them back. If they were "Smart Folders" you can just recreate them.

They were not dragged from some other source, so I’ll guess they were smart folders? Even though I don’t know that term... I will for sure look on how to recreate them tomorrow. I can’t find the files when I search for them i the finder though.
Hard to say but, if for example you wanted to search for all PDFs, you could do a search for PDFs then save the results which would be a folder with only PDFs in it.
However, Are you thinking of what used to be labeled "All My Files"? That was removed. If you are thinking of the "Recents" folder, open Finder > Preferences > Sidebar and check the Recents box.
There were two of my own folders in the sidebar in Finder containing a lot of documents - not saved results or dragged from another source. And when I try to open the folder, it says that it can’t be opened because whats inside the folder does not exsist/can’t be found
Well, there's only two method of adding folders into the Sidebar, dragging existing folders into it or creating a Smart Folder.

Well one of the folders is gone, because I tried to drag it somewhere else . Nonetheless the documents inside both folders (one gone, and the other in the sidebar) are not to be found in the computer.

You're welcome. The link explains what they are but basically they are a saved "search" so you don't have do the same search over and over.
