I have recently discovered that someone has been accessing and controlling my phone remotely through 'Switch Contol' does anybody know anything about how this works? Because whoever it was was able to control my phone and switch through apps remotely!!!

No one is accessing or controlling your phone remotely.
Switch Control is an accessibility feature of iOS.
So those were the recipes on Switch Control that were set up. Somehow I had 3 recipes on there that all did different things. I didn't set them up so someone else must have!
An iPhone cannot be hacked unless until you jail break the device.
Or maybe you've given your device to somebody else they might have changed some of its settings.
So it is possible that someone went on my phone, changed the settings and then this could happen?
If they had physical access to the device and the passcode or it was unlocked, yes.
