how do you encrypt external hard drives with a Mac Book Air running Mojave 10.14.6 please ?

How do you encrypt external hard drives with a Mac Book Air running Mojave 10.14.6 please ? Fire Vault only allows me to list the internal hard drive, Finder does not give me the option to encrypt plug ins and disk utility erase does not offer me any encrypted file types, so none of the on line advice works. I seem to have lost the options through software updates.

You must create a GUID Partition Table on the drive.

In Disk Utility, select Show All Devices from the View popup menu.

Select the device and Erase it, selecting a GUID partition table.

You have have to erase it initially in a non-encrypted format, then again encrypted.

You can only encrypt APFS or HFS+
