How to control junk mail filter on iPhone/iPad

My junk mail filter suddenly started marking mail from a legitimate sender as Junk and put these messages in the Junk folder. This email address is in my list of Contacts.

How do I stop these messages being marked as Junk?

In general, what controls are available for the junk filter?

There is no junk mail filter on the iPhone or iPad.

If you 'move a message to junk' on the device, all it does is flag it and notify the server.

Any filtering is actually being done on the mail server, not your device.
