until now I shared my iCloud space with my family.
My son gets older and wants his own space now.
How can I make the switch for him and move all his stuff from my iCloud to his iCloud without losing anything? And afterwards, can I remove his account safely from my ICloud?

When he starts sharing iCloud Storage space, the only"change" is how it is paid for and by whom. The actual storage he is using does not change.

This means he currently has no storage of his own and any content he accesses using your Apple ID is not his. It's yours that he uses.
With Family Sharing he has his own account but can use any shared content you have.

There is no moving content between Apple IDs.
Family Sharing allows his new Apple ID to share in some content. Some of his content may need to be migrated manually, like contacts, reminders, photos and so on.
