as it says in the title - I usually back up my iPhone 7 to iTunes but dont know if mw new iPhone SE will backup in the same way (have had problems with initial setup saying i need to update to catalina)
not wanting to update to catalina until the end of academic year as i am using some apps not supported under it apparently

If I hadn't been quite so worried that the 'Install' option on the error message I saw would install Catalina, I would have been sorted by now!
A very lovely gentleman from AppleCare in Texas sorted me out - I did need to hit 'Install' where it said in the error message - it was an update to iTunes that was needed and that is what it did.
All now seems to be well and I am sorry for raising the question here - many thanks to Ferd II and VikingOSX for their help :-)
If you received this, or a similar warning:
...it is not referring to an upgrade to Catalina. This message usually means that iTunes does not recognize your iOS device because your iOS device is running a newer version of the iOS software that your Mac supports.

Both my iPhone 7 and iPhone SE are running the same iOS (13.4.1).
iTunes (12.9.5.5) recognises the iPhone 7 quite happily but not the iPhone SE - the message you refer to is what I get when I try to connect the SE
