Apple Time Machine

You are asking about Time Capsule, not Time Machine.

The Airport Expresses don’t require Time Capsule. Here’s their setup guide.

I guess I don't have a clue how to disconnect the time machine and still listen to my AirPort Expresses speaker systems?

Sorry, I didn't see speaker referenced in your original post.

Seems that Airplay technology is used for driving a speaker from a router.

Time Machine, a software backup application, has never been used directly by iPhones. Time Machine is part of MacOS, and is, in fact, still supported and used within MacOS Catalina.

I think you mean Time Capsule, which was a network connected hard drive/router from Apple.

It used Time Machine, which is still a current software offering.

Any external hard drive that can be "seen" by macOS should work for Time Machine.
