How are you managing the contacts? Do you use an email account that deals with contacts? If you are just housing the contacts on the iPhone, the only way to recover a deleted contact is to restore the iPhone to a backup made before you deleted the contact. Restore your iPhone, iPad, or iPod touch from a backup - Apple Support
