Delete books that are using up all of my iCloud storage

Once I have read a book I would like to delete it from my iCloud storage - - which has grown to the point that I now have to pay extra. How do I delete these books?

iPhone X, iOS 13

You can hide them but not delete them -- Hide App Store purchases - Apple Support.

Remember, content you've downloaded from iTunes doesn't count toward your iCloud storage so your free 5GB (or additional) will not be affected. You can't permanently delete any items from your purchase history, all you can do is hide items so that they don't show in the Purchased tabs for re-downloading.
