I have a new iPhone11 and in the process of transferring from my iPhone 7 Plus and there is a Software Update. Is this normal? It is taking forever. I thought this would be an easy process.

What you are experiencing is normal. If your iPhone 7 was running the latest version of iOS 13.5.1 and the new iPhone 11 is running an earlier version of iOS, the new phone must be updated before you can restore the backup on the old phone.
