Apple Watch
I have a new s5 cellular how do I get the watch to work independently of my phone? Do I need a separate sim?

An apple watch can't operate independently of a phone,it requires the phone to set the watch up and to upload fitness and health data etc..
The cellular version of the watch has a built in E-sim that uses the phones number to make and receive calls but it still needs a phone with a sim card in it.
