Connecting my iPhone to my MacBook

When I plugged my iPhone into my MacBook, I was told, "a software upgrade is required to connect to your iPhone." Is the software update referred to here an OS update? I am currently running Mojave on my MacBook and I do not want to upgrade to Catalina. Can I connect with my iPhone X without upgrading to the latest OS on my MacBook?

Now I have a follow-up. When I plug my iPhone in, iTunes asks if I want to set it up as a new phone or restore all of my information from a backup. All of the backups listed are from quite a while ago, so I don't think I want to do that. But if I set it up as a new phone, will anything that is currently on my phone be lost? Or will it just bring into iTunes anything that is currently on my iPhone?
