Pages is suddenly making an entire previously typed paragraph boldface even though no command to do so has been given. This has happened several times. I have to go back and reformat the paragraph to remove the boldface. The boldface seems to relate to a button (appears in the upper righthand corner) that says "Update." Does this Update button create the boldface? What is the function of the button?

I'm guessing you are seeing the Update button next to a style name with an * next to it.
If you click the Update that style will be changed to reflect the style of the selected text.
For example, let's say you originally had Body text that was not bold. You select some Body text and make it bold. Numbers will then present the Update button. If you click Update all text in your document with the style Body will become bold.
And the reverse is true. If all of your Body text is bold then you can select some of it and remove the bold. Then click the Update button to remove the bold from all text with the Body style.
