I can't find the serial number on the watch itself and it wont let me pair my watch or disconnect and reconnect to my iphone

I can't find the serial number so I can't ask Apple directly, but my watch won't unpair and repair or update so it still says its in 2017 and won't update no matter how long I wait. I'm connected to wifi both my phone and watch is plugged in, and I'm just not sure what to do

Apple Watch Series 3, watchOS 5

On most Watches the serial number is engraved in the watchband channel on the same end of the watch as the digital crown.
