my brand new series 5 watch can’t pair my iPhone ever since I bought it. When I try pairing, a pop up comes that I must update my phone before I can pair the watch. But the phone is already updated to iOS 13.7. What should I do?

Forgive me, but you’ve obviously already restarted both? Does the message ever change? And you’re sure both the phone and watch are fully updated (not just one?!
