Did you mean reset your iPhone 11 to factory settings while completely deleting all data? You can do that without iTunes.

Open Settings ➔ General ➔ Reset ➔ Erase all Content & Settings : This option will Erase all Settings and Contents of your iPhone and return it to Factory Settings.
