is itunes now not available for windows 7

It appears the latest version of iTunes is for Windows 10 upwards. Use these links to get the last version that runs on Windows 7.

• iTunes 12.10.10.2 for Windows (32-bit) - iTunesSetup.exe (2020-10-19)
• iTunes 12.10.10.2 for Windows (64-bit) - iTunes64Setup.exe (2020-10-19)

Exactly. Like everyone using anything that isn't bang up to date you would be running code known to have unpatched security vulnerabilities. Of course even the latest code has both unknown and known but not yet patched issues. You'll have to decide whether to accept the risk or move on to Windows 10.
