Even though showing full wifi connection, Chrome keeps losing connection and booting off Meets. Both Chrome and Big Sur up to date. How can I fix this. Only happening on 1 of 3 macs we own - other 2 are fine.

The first thing I would check is to see if Safari or another browser is also affected. If not, then that would indicate that there is a problem with Chrome and I would try reinstalling it. Also, sometimes doing a restart in the Safe Mode fixes things. Press the Shift key on restart. It can take up to ten minutes, so be patient.
