Apple Watch Series 6

I want to purchase a series 6 watch as a Christmas gift. My question is can you buy the watch without buying the GPS or GPS/Cellular?

All Apple Watches have, at least, GPS built in. Depending on the model, cellular may or may not be able to be added or removed.
