I just purchased an ipad air and during setup I did a sync with my iphone. Now I need to know how to unsync my devices so they dont mirror each other?

they don't mirror each other part from if you sync cal, contacts and the likes to icloud
and if you enable auto download apps, apart from that they will lead separate lives
