How to delete Bookmarks
I added a Bookmark from the “Shortcuts” app on my home screen by mistake, and when I go to delete it no - appears next to it like it should

You've got a bit of an unusual case there. I would suggest that you try deleting the shortcut in the Shortcuts App. To do so, open the app, press "Select" in the top right hand corner of your screen, select the shortcut, and hit "Delete" in the bottom right hand corner of your screen. You may need to restart your phone if it doesn't instantly go away.
