I want my purchased tracks from apple music to be stored as MP3.
It's easy to buy something from apple music thru itunes.
However that doesn't change the file format, als not after deleting.
In the end I want it to be an mp3 (or flac, or wav)

Apple only supplies music as AAC/m4a. If you want it in another format you will have to convert it with the possibility of slight quality loss (unless to a lossless format).
By the way, iTunes can't handle FLAC.
