I want to completed reset an old iPad. It currently has my old email address listed and I can't seem to find a way to change it to be able to login for the reset. How do I change this?

You can create your apple id. Just tap on Create Apple ID
That won't help if it is linked to the old Apple ID (which is an email address). OP needs to sign in with the old ID and password.
