When transferring data from my old iPhone to my new iPhone, does all my data delete from my old iPhone? And what exactly is being transferred?

Nothing is deleted on the source iPhone.

After you transfer to your new iOS or iPadOS device, you might need to complete a few more steps to finish the process. This gives you an indication of what do not get transferred
