Whenever my MacBook 'sleeps' it shuts off and I have to press the power button to restart it.
I feel like I have tried everything to fix it - no hardware problems found on diagnostics, I've uninstalled many of the apps, and I have nothing external connected at the moment. Does anyone know what I can do? Thank you.

It seems it's a Thunderbolt related issue. You'd better make Genius Bar reservation if your neighborhood retail Apple Store is open or find near you opened Apple Authorized Service Provider to check your MacBook Pro with advanced checking utility they have.
