I am trying to pair my watch to my IPhone. I no longer have the email address that I set the phone up with when I originally bought it and paired it with a iPhone I no longer have.
I can’t seem to pair it to my new phone since I no longer have the original email address and password. What can I do to pair it with the new phone?

If you know the email address and password you used for the original Apple ID you can still use it. The email address simply functions as your login username for Apple ID, so it doesn't matter if the email itself is no longer valid.
You need to login to your old Apple ID and remove the watch to release Activation Lock. If you can't remember the Apple ID login credentials you may have a problem which will prevent you reconfiguring the Apple Watch. See If you forgot your Apple ID password - Apple Support

Take it to an apple store along with receipt and some photo id and they may be able to help you;
