How do I change the way pages looks

I recently updated Pages for Mac but I don't like the brown colour of the display tabs and when I highlight text it also appears as the brown colour. How do I change this? I preferred the usual blue display colour. I find it really distracting.

In Big Sur, Apple has started using System Preferences > General > Accent colors to paint those Pages controls. I switched my accent color to blue, which also changed the Finder Favorites panel icons from yellow to blue too. Bonus.
