what is this charge for?
what is this charge I keep getting from apple iTunes? it's multiple times a month. I didn't willingly sign up for anything.

First determine whether those are actual charges on your account, or just scam phishing messages trying to scare you. Phishing messages pretending to be from Apple are unfortunately very common.
If there is a real charge on your account, follow the steps in here:
If you see 'apple.com/bill' or an unfamiliar charge on your statement - Apple Support
