i want to change the date on my phone to the date format 2/5/2021 could i do that?

The date format is based on the country / region chosen on your Apple ID.
Try it here --> Settings > General > Language and Region > Region [Choose the region where the data format is used] This change will affect in many other places like currency, payment in App store etc.
